Mixed Berry Cobbler

Santa Clause gifted me an air fryer this Christmas. And I’ve been having a BLAST cooking in it! To this day I’ve cooked a full turkey breast, cornish hens, homemade french fries, two breakfast dishes and personal sized mixed berry cobblers. If there was such a phrase of ‘visual deliciousness’ this picture would be spot on!

1/2 c. flour
4 Tbsp. sugar
1/2 tsp. baking powder
1/4 tsp. salt
4 Tbsp. milk
1/2 tsp. vanilla
2 Tbsp. melted butter
4 Tbsp. frozen mixed berries (or as you see fit)

Whisk all dry ingredients in small bowl. Make a hole in center of dry ingredients and add milk, butter, and vanilla. Stir until combined. Fold in frozen mixed berries. Preheat air fryer to 375 degrees. Pour batter into individual greased ramekin dishes. Air fry for 15 minutes until cobbler is browned and cooked through. Let cool. Serve with a scoop of ice cream if desired. Enjoy!
